Introduction

Sweet & Spicy Chicken...Mexican Style Sweet & Spicy Chicken...Mexican Style
Number of Servings: 2

Ingredients

    Marinade:
    Juice of 2 large Limes
    2 Tbsp Honey
    1 Tbsp Chili Powder
    1 tsp Ground Cumin
    1 Tbsp Cayenne Powder
    1 tsp Crushed Red Peper Flakes
    3 Tbsp Cilantro (aka Chinese Parsley or Corriander Leaves)

    2 Boneless Skinless Chicken Breast

Directions

Wisk Marinade Ingredients together in a bowl. Taste and adjust ingredients to your liking. (Add more sweetness, or add more spice.)

Pour Marinade in a Ziploc bag along with chicken breast. Marinate for 15-20 minutes.

For best flavor, Using a Charcol grill-Grill for 20-25 Minutes.
or
Cook in Oven at 350 degrees for 30 minutes.

    Incredible!
    This was awesome. That said, the Aye Caramba moniker is a bit misleading. For those that like heat, the marinade needs some playing with. I added twice as much red pepper flake and it was tasty but not hot at all. Maybe some chopped habanero or even a couple squirts of sriracha? - 5/13/14

    Very Good
    This was very good. I cut the cyanne back to a teaspoon and it was still a little spicy but I like it that way. I am always looking for rubs and marinade without salt. Thanks - 1/9/09

    Incredible!
    We grilled our chicken using this marinade. It came out super juicy, spicy and lots of flavor. I marinated mine for a few hours, cut back on the cilantro, and added about twice as much honey to even out the spices. - 4/24/08
