Ingredients

    1.5 lbs of chicken, cut into strips or chunks
    salt & pepper to taste
    3 cloves garlic, minced
    2 TB extra virgin olive oil
    1 cup low sodium chicken broth
    1/2 cup balsamic vinegar
    1/4 cup packed brown sugar
    1/4 cup whole wheat flour
    6 pieces Trader Joe's tuscan pane
    1 large tomato
    1/4 cup part-skim shredded mozzarella
    30 leaves basil

Directions

Sprinkle cut chicken with salt and pepper. Saute with garlic in olive oil until browned on both sides and garlic is fragrant (8-10 minutes). Add in broth, vinegar, and sugar. Bring to a boil. Then reduce heat, cover, and simmer 10-15 minutes, ensuring chicken is cooked. Add up to 1/4 cup whole wheat flour to thicken sauce a bit.

Put bread onto a cookie sheet. Top half of each piece with basil, tomato, chicken, and mozzarella. Bake at 350 until cheese is melted. Fold other half over to create a sandwich, or just pile on to eat with a knife and fork.
