Ingredients

    1/2 lb. reduced fat smoked turkey kielbasa, sliced and each slice cut into fourths
    1 medium onion, chopped
    1 celery rib with leaves, thinly sliced
    4 garlic cloves, minced
    2 cans (14 1/2 oz) reduced sodium and fat free chicken/vegetable broth
    1 can (14/12 oz) fire roasted tomatoes or can of diced tomatoes
    1 small zucchini, sliced
    1 medium carrot, shredded
    1 T dried parsley flakes
    1/4 t. crushed red pepper flakes
    1/4 t. pepper

Directions

Cook kielbasa in a non-stick pot over medium heat until lightly browned. Add onion, bell
pepper, celery, and garlic; cook an additional five minutes. Stir in chicken broth, tomatoes,
zucchini, carrot, parsley, red pepper flakes, and pepper; cover and cook on a low simmer for one
hour, stirring occasionally. Add chopped green onions as garnish.
