Introduction

Super easy, super delicious! Vegan, but everyone will love it. Super easy, super delicious! Vegan, but everyone will love it.
Number of Servings: 8

Ingredients

    2 c. dry lentils, rinsed & sorted
    5 c. tomato juice
    1 14.5-oz. can stewed tomatoes
    1 medium onion, choppped
    2 medium carrots, sliced
    2 medium celery stalks, sliced
    3 cloves garlic, minced
    3 medium red potatoes, cubed (1/2-3/4")
    1 t. ground oregano
    Freshly ground black pepperĀ  & salt to taste
    1 t. hot pepper sauce

Directions

Place all ingredients in crock pot. Cook on low for 8 hours or high for 4 hours. Great served with a salad & whole grain bread.

    Very Good
    Both my husband and myself do like it. :) I use water instead of the tomato juice, canned diced tomatoes with green chilies, and for a different taste you might like to try sweet potato or butternut squash instead of the red potatoes. I don't care much for the celery (gas).. so I do without. - 9/23/09
