Ingredients

    4 cups chicken broth
    2 cups dry uncooked quinoa
    1 cup feta crumbles
    1 pint grape tomatoes, halved
    1 med. cucumber, diced
    5 oz. grated carrots
    1/3 cup Ken's Light Balsamic Vinaigrette

Directions

Bring the chicken broth to a boil in a medium saucepan. Add quinoa, remove from heat and cover. Let sit for 15 minutes, or until quinoa is tender. Chill in refrigerator until cool. Add grape tomatoes, cucumber, carrots, feta and dressing. Toss until evenly coated.

Serving Size: Makes 13 servings (1 cup each)
