The Greek yogurt adds creamy protein to this tasty vegetarian dish! The Greek yogurt adds creamy protein to this tasty vegetarian dish!
Number of Servings: 6


    1 frozen pie crust
    4-5 large tomatoes, in half-inch slices, drained
    1 cup zucchini, jullienned
    1/c green onions
    1/2 c Greek yogurt
    1/2 c shredded cheddar cheese


Preheat over to 350. Bake crust 10 minutes (unless pre-baked).

Layer half the tomatoes, green onions, zucchini and remaining tomatoes. Mix yogurt and cheese and top the last tomato layer.

Bake until crust is done, tomatoes are tender and cheese is ooey-gooey.

Optional: Top with bacon bits (not vegetarian!) and/or fresh basil before baking

Serving Size: Makes 6 servings
