Introduction

Ingredients

    3 pounds assorted root vegetables, such as carrots, parsnips, turnips, and rutabaga, coarsely chopped
    2 cups pearl onions peeled
    3 garlic cloves
    4 cups chicken or beef broth fat free low sodium
    1.5 cups of fat free milk
    3 tablespoons light butter
    1/4 tsp fresh thyme
    1/2 tsp rosemary

Directions

Place all the vegetables, thyme, rosemary and garlic in a large pot and fill with cool chicken or beef broth to cover. Bring to boil over medium heat and simmer for about 30 minutes, until the vegetables are very tender.
Drain vegetables and put them into a large mixing bowl. Mash with a potato masher. Stir in the milk and butter and season with salt and pepper to taste. I used cajun seasoning for this part.
