Ingredients

    Goya 16 bean soup mix (dry) (2 bags)
    4 oz salt pork, cubed
    7 stalks of celery, chopped
    30 baby carrots, chopped
    1 medium onion, diced
    4 cloves garlic, minced
    3 t. ground black pepper
    3 C. fresh mushrooms, chopped
    2 sweet potatoes, cubed

Directions

Soak beans overnight in large bowl (or cover with water and microwave for 1 minute). Drain and rinse.

Pour beans into large stockpot. Add salt pork, celery, carrots, onion, garlic and pepper. Cover with water (or stock of choice, although this will add calories and sodium to the recipe totals). Stir all together and simmer on medium-low heat for 2-3 hours, switching to low heat if the stew starts boiling rapidly.

Add mushrooms and continue to simmer. About a half hour before serving, add sweet potatoes (this is so they don't get too mushy).

Before serving, remove the fattier bits of salt pork. Serve with good crusty bread or crackers.
