    1 lb Kale, washed, ribbed and cut into one-inch pieces
    one 15 oz can cannellini beans, drained and rinsed
    one 15 oz can diced tomatoes
    half cup of vegetable stock
    2 tsps olive oil
    three cloves garlic, minced
    seasonings to taste (basil, oregano, salt, pepper)


Makes four servings

Boil the kale in two quarts water until tender but still bright green...about 5 minutes

In a large skillet, heat oil over medium heat. Add garlic and saute a couple minutes, until tender. Add beans and heat through with garlic. Add Kale plus remaining ingredients and simmer for just a few minutes to heat through....serve immediately.
