Ingredients

    3/4 cup all-purpose flour
    3/4 cup wheat flour
    1 cup oat bran
    3/4 cup brown sugar
    1.5 teaspoons baking soda
    1.5 teaspoons baking powder
    1/2 teaspoon salt
    2 teaspoons ground cinnamon
    3/4 cup milk
    2 eggs, beaten
    1 teaspoon vanilla extract
    1/2 cup applesauce
    1 cup shredded zucchini
    1 cup chopped pecans

Directions

Heat oven to 350 degrees.

In a large bowl, mix flour, oat bran, brown sugar, baking soda and powder, salt, and cinnamon. In a separate bowl, mix milk, eggs, vanilla, applesauce, and zucchini. Stir wet ingredients into dry ingredients until just moistened. Fold walnuts into the batter.

Fill muffin tins about 2/3 full. Bake for about 15 minutes or until a toothpick inserted in the center comes out clean. Cool muffins in pan for about five minutes before placing on a wire rack.
