Introduction

Ingredients

    Chicken breast ( cooked- boil with half an onion and 3 garlic cloves; not in the ingredient list).
    Pinto beast ( you can boil the pinto beans and use one cup for this recipe it will be less fattening, do not have to be refried, just blended or mashed.)
    Tostadas, corn tostadas, not the pollo loco tostadas shells, usually corn tostadas have less fat than flour tostada shells.
    NOTE: For the ingredients listed I used Pollo Loco tostada shells because they were the only ones in the list, but compare the calories on the package when you buy them.
    Pinto Beans - (boiled with just water and salt, they are done when soft.)

Directions

1. Shred the chicken and put it aside.
2. Shred the cabbage and put it aside on a dish.
3. Slice the onions and put it in a container,( add lemon juice and salt to taste); put aside.
4. Mash or process the beans on a blender and put it on a shallow dish.
5. Shred the cheese put in a dish and set aside.

Now you spread the beans on the tostada, add cheese, add shredded chicken, add shredded cabbage, add the onions, add more cheese if desired. Top it with the tomato salsa (See recipe) . If you like it spicy add Tapatio sauce or Tabasco sauce, also you can add lemon juice to your tostada, just squeeze a lemon wedge on top of the tostada.

To make salsa:
Boil the tomatoes, when the tomatoes are done, puree them in a blender, add a dash or a tsp. of dry oregano, 1-2 garlic cloves, and salt to taste, puree it together and that is it! You are ready to add it to your tostadas.
