Ingredients

    Pam
    4 medium scallions, sliced
    2 garlic cloves, chopped
    10oz frozen spinach
    1/2 cup 1% cottage cheese
    1/2 cup Heartsmart Bisquick mix
    1 cup fat free milk
    1 teaspoon lemon juice
    3 eggs
    3 tablespoons grated Parmesan cheese
    1/4 teaspon ground nutmeg

Directions

Heat oven to 350 degrees. Grease a 9-inch pie plate. Spray a non-stick pan with Pam over medium heat. Cook scallions and garlic 2 to 3 minutes until tender. Stir in spinach (make it has been thawed and excess water has been squeezed out). Spread mixture in pie plate and spread with cottage cheese.

Stir in Bisquick mix, milk, lemon juice, pepper and eggs until blended. Pour in pie plate; sprinkle with Parmesan cheese and nutmeg.

Bake about 35 minutes or until knif inserted in center comes out clean. Cool 5 minutes.

Yield 4 servings.
