Ingredients

    1 c chopped onion
    2 tsp chili powder
    1 tsp ground cumin
    1 tsp ground oregano
    3 cloves minced garlic
    2/3 c quick cooking barley
    1/4 c water
    1 can diced tomatoes with green chilies
    3/4 c low sodium kidney beans
    3/4 c low sodium pinto beans (can use whatever beans you have on hand)
    1.5 c vegetable broth
    1/4 c corn

Directions

Heat pan over medium heat. Sautee onion for 3 minutes.
Add chili powder, cumin, oregano and garlic.
Cook for 1 minute.
Add barley, water, tomatoes, beans, corn and broth.
Simmer for 20 minutes until barley is tender.

Serve!
Garnish with sour cream, cheese, or just eat plain!
