Fall Casseroles are scrumptious and can be light as well! Fall Casseroles are scrumptious and can be light as well!
Number of Servings: 6


    3 cups sweet potatoes, cubed
    14oz. Smoked Turkey Sausage, sliced in inch rounds
    1 onion
    1 apple, peeled and cored
    1/4 cup olive oil
    1 tablespoon Splenda
    1 teaspoon cinnamon
    1 teaspoon garlic powder
    1/2 teaspoon chili powder
    Salt and pepper to taste


Preheat oven to 375. Leave peels on sweet potatoes and chop them, the apple, and the onion into bite sized chunks. Place potatoes, onions and apples into a large mixing bowl. Add olive oil and all seasonings (more or less of these taste.). Mix gently until everything is coated well. Pour into 13x9 in pan coated with non-stick cooking spray and cover with the sausage rounds. Bake uncovered in 375 degree oven for 1 to 1 hours until potatoes are tender.
