Ingredients

    1 egg, beaten
    1 c. bread crumbs
    3 tbsp low fat mayo
    2 tbsp green onion
    1 tbsp fresh dill chopped
    1 1/4 tsp seafood seasoning
    1/4 tsp black pepper
    16 oz canned crab, drained, flaked and cartilege removed
    Nonstick cooking spray
    3 tbsp bread crumbs
    2 tsp canola oil
    3 1/2 oz roasted red pepper, drained and chopped

Directions

Preheat oven to 450. In med. bowl combine egg, bread crumbs, mayo, green onion, dill, seasoning and pepper. Stir in crab meat. Divide mixture into 8 portions. Moisten hands and form each portion into a patty. Coat shallow bake pan with cooking spray. Place cakes onto pan. In small bowl, combine rest of bread crumbs and oil sprinkle over crab cakes, pressing into the patty. Bake uncovered for 12-15 min or until lightly browned. In small bowl, combine red pepper and some seafood seasoning. Scoop 1-2 tsp of this on top of cake and serve.
