Ingredients

    Onions, raw, 1 medium (2-1/2" dia)
    Celery, cooked, 1 cup, diced
    Chili powder, 3 to 5 tbsp, to taste
    Venison, 6 serving ( 3 oz )
    Beans, red kidney, 4 cup
    Canned Tomatoes, 5 cup
    Mushrooms, cooked, 2 cup pieces
    Canola Oil, 2 tbsp
    Olive Oil, 2 tbsp
    Salt and pepper to taste

Tips

I like tinkering a bit with chili recipes. Add red wine if you'd like. Add ginger and cumin, black, red and white pepper, hot sauce, and so on.


Directions

Heat oils in chili pot, at medium heat. Sautee onions, celery until soft. Add mushrooms next, if you prefer a little carmelized flavour. Then add beans and tomatoes and bring it all to a simmer. While the veggies are heating up, toast the chili powder in a non-stick pan, then brown the venison in the same pan before adding it to the chili pot.

Let simmer for 2 to 3 hours.
