Ingredients

    Ingredients:


    Beans, black, .5 cup soaked
    Stewed Tomatoes no salt added, 0.5 cup
    Meijer Organic Tomato Paste, 2 tbsp low salt
    Peppers, sweet, red, raw, chop, .25 cup
    Onions, raw, .25 cup, chopped
    Ground beef, extra lean, 3 oz browned
    Colleg Inn Light & Fat Free 50% less sodium, 1 cup either beef or chicken
    Bon Campo Sun Dried Tomatoes, 23 gram(s) dry no oil
    Garlic, 1 tsp chopped or use paste


Directions

Soak black beans either over night or 1 hour in boiling water
Spray pan and brown extra lean ground beef with chopped onion, peppers and garlic added
Place all ingredients in slow cooker,
Season to taste with black pepper, chili pepper, cayenne or any southwestern flavors
Let cook for 4 hours -the longer the better.
Serves 2,
*can be served with dollop of no- fat sour cream or yogurt
