Introduction

A perfect, almond-based flour-and-gluten-free citrus cake with the beautiful colour and tang of blood oranges and the slight crunch of poppyseeds. A perfect, almond-based flour-and-gluten-free citrus cake with the beautiful colour and tang of blood oranges and the slight crunch of poppyseeds.

Ingredients

    2 blood oranges, peeled and seeded (substitute navel oranges if necessary)
    6 eggs
    1 cup almond meal
    1 cup sugar
    1 ½ tsp baking powder
    ¼ cup poppy seeds

Directions

Preheat oven to 375F.
Place the orange segments in a blender with the remaining ingredients and blend until well mixed.
Pour into a greased and floured 9” pan.
Bake for 30-45 minutes.
Cake is cooked when set but still moist

    Very Good
    Great recipe for avoiding gluten...a little different taste/texture but very good! I recommend using less poppyseeds and making sure your eggs are fluffy. If you use Splenda instead of sugar they will not be nearly as fluffy. - 4/14/11
