Ingredients

    5 chicken thighs*
    1/2 cup brown sugar
    1/3 cup white wine vinegar*
    1/4 cup Diet Sprite (or other lemon lime soda)
    2 tbsp soya sauce
    1 tsp pepper
    3 cloves garlic, chopped

Tips

Calorie counts are for all the chicken AND all the juices. Remember that the juice is what has the sugar in it, so if you eat only the meat and reserve or toss the cooking liquid, you save yourself a few calories!

Recipe can be doubled easily!

*I bought regular thighs with bone & skin, removed the skin and cooked with bone in, then removed it later - but boneless/skinless will work too
* regular vinegar works fine too


Directions

Throw all the ingredients in a 4-Quart Crock Pot. Toss and cook on high for 4-6 hours, or low 6-8 hours.

Remove thigh bones (if cooking with whole pieces) and shred the meat - will also help soak up the yummy juices.

Serve with roasted veggies over rice for a complete meal!

Serving Size: Makes 5 Servings (one thigh each)
