Ingredients

4 packs Nabisco 100 Calorie Oreo Thin Crisps
1 (4-serving) box Sugar Free Fat Free pudding mix, butterscotch (or other flavor if desired)
1 tbsp 50% less fat margarine (like Country Crock Light)
1 serving bittersweet chocolate chips (70 calories)
Tips
I also reserved some of the finely powdered oreo "dust" to sprinkle over the top of the finished pudding, just for looks.
Directions
1. With three of the four bags of oreos, crumble the cookies (while still in the bags) until they are fully crumbled and almost powder-like. Reserve the last bag of oreos, but empty out the 3 crumbled bags into a small bowl.
2. Melt the 1 tbsp of margarine in the microwave for 20 seconds.
3. Pour melted margarine over the crumbled oreos and stir with a spoon until as many of them get coated as possible; press these around the edges of a pie pan (i.e. 9 in).
4. With last bag of oreos, use around 6 cookies to fill in the empty space at the center of the pie pan (reserve the remaining cookies).
5. Pour 2 cups cold fat-free DAIRY milk into a bowl, and whisk together with pudding mix for 2 minutes.
6. Pour the pudding mixture over the oreo crust, coating evenly.
7. Take remaining oreos and place around sides of pie pan like a border (will not go around the entire pan, so space however you like).
8. Scatter the chocolate chips over top of the pudding pie.
Ready to serve after sitting for only 5 minutes!! (or can be refrigerated, covered, until ready to eat later)
