Ingredients

    12 oz Chicken
    24 crackers crushed
    2 egg whites
    2 to 3 red potates, boiled and mashed
    2 tsp fat free cream cheese

Tips

Red potatoes are much lower on the glycemic index compared to regular white potatoes. Replace red potatoes for white ones in any recipe.


Directions

Stab potatoes with fork. Place potatoes into a pot with enough water to cover potatoes. Bring to boil and cover. Boil for about 20 to 30 minutes, until potatoes are soft.

While potatoes are boiling, trim any visible fat from your chicken. In a large zip-lock bag, mash your crackers. The more fine, the better. Soak the chicken in the egg white, then place the chicken into zip-lock bag. Shake until chicken is well coated. Once all chicken is done, place on to a foil lined cookie sheet. Bake 25 to 30 minutes, until chicken is fully cooked.

Once potaotes are soft, mash with fork, and add cream cheese. Salt and pepper to taste.
