Ingredients

    4 boneless skinless chicken breasts
    1 tbsp olive oil
    1/2 yellow onion, chopped
    3 cloves garlic, minced
    10 ounces Fresh Express Baby Spinach
    2 tomatoes, chopped
    1/2 cup shredded part-skim mozzarella or crumbled feta

Directions

Flatten and butterfly cut chicken breasts.
Brown chicken and cook through.
Meanwhile, heat the olive oil in a separate pan. Add the onions and garlic, cook for five minutes, then add the tomatoes and spinach. Cook until the spinach is wilted.
Divide the vegetables among the chicken, top with cheese and heat just until the cheese melts.

    unlike Jen, I am a chef by profession. I changed it up slightly: Sauteed the garlic and onions to golden, then added the rest - added some chopped mushrooms. Pounded out the chicken breast very thin, put in the stuffing and rolled it up. Put the rolls in a baking dish and baked until done. Yum! - 7/10/07

    I'm curious why the picture never matches the recipe? I don't see tomatoes. I don't see where it says to roll it or how to do that. For those of us that aren't "cooks" it would be nice to have a picture of the actual dish. I'm such a bad cook, I need the picture as guidance. Thank you! - 8/26/14

    I didn't put in the tomatoes because everyone in my family despises them. I baked it at 350 for 30 min. Mixed about 1/2 cup of parmesan with spinach, since I had no mozzarella. - 3/19/08

    I've been looking for new ways to do chicken lately, and this hit the spot. I did it the way that CandyBill suggested, by flattening the chicken and rolling it up. Came out beautifully! - 11/2/07
