Ingredients

1 T. butter
12 oz. bread (crust is best, but any will work!), cut into 1-inch cubes
1 c. grated cheese (cheddar, swiss, jack, etc.)
1 c. chopped scallions
6 eggs
2 c. milk
1 tsp. salt
1/4 tsp. pepper
1-2 T. Dijon mustard
Directions
Preheat oven to 375 deg. F. Place butter in 2-qt. baking dish and place in oven to melt. When butter is melted, swirl it around to coat the dish. Add bread cubes in an even layer. Sprinkle with scallions and cheese.
Beat eggs in a medium bowl; add milk, salt, pepper, and mustard and whisk till well blended. Pour custard over bread cubes (use a spatula to push any bread cubes back down into custard if they float!). Cover with tinfoil and bake for 25-30 minutes (depending on the shape and depth of the baking dish). Remove the foil and bake until puffy and golden brown, about 5 minutes.
