Ingredients

1 cup (1/2 can) canned pure pumpkin
1/2 cup unsweetened applesauce
2 egg whites (or 1/3 cup + 1 tbsp liquid egg whites)
3 scoops vanilla protein powder **
1/2 cup old-fashioned oatmeal
1 1/2 tsp baking powder
1/2 tsp baking soda
1 tbsp pumpkin pie spice
1/2 tsp cinnamon
1 1/2 tbsp truvia (or other no-calorie sweetener)
**note: I have tried this recipe with several different protein powders and I get the best tasting and best looking results from a whey & soy blend I found from Kroger.
Directions
Preheat your oven to 350 degrees; spray a 6-cup muffin pan with nonstick spray.
Mix all wet ingredients (pumpkin, egg white, applesauce) together until fully blended, in a bowl.
Slowly add in each dry ingredient ONE AT A TIME into the wet mixture.
Distribute batter evenly among the 6 muffin cups (approx 1/4 cup, mine made much more).
Bake in the oven for 15-20 minutes, or until golden brown and springy-firm to the touch.
Serving Size: makes 6 LARGE muffins :)
