Introduction

Ingredients

    One roasting chicken
    One box chicken broth (low sodium)
    One large onion, chopped
    rubbed sage
    black pepper
    red pepper
    cumin


Tips

Some things that make this extra special are a dollap of sour cream on top, or grated cheese. Fresh, raw onions are also really good included after the cooking process. Jalapeno peppers can add some extra zing!


Directions

Combine onion, chicken and broth and any extra water needed to cover chicken. Bring to a boil, reduce heat and let simmer until chicken begins to fall off the bones, about one hour. Once done, pull chicken from the broth and place on platter to cool. While the chicken cools, bring the broth and any extra water needed at this point to a boil. Add the extra spices to taste. Add the Rotini pasta and allow to boil until the pasta is nice and soft, but not mushy. While that is boiling, remove chicken from the bone. Once the pasta is done, return the chicken, without the bones to the pot. It is ready to eat.

Serving Size: One regular bowl full
