Introduction

My Mother-in-Law is a southern raised cook and loves to take the left over mashed potatoes to make potato patties for us and the grandkids- I just lightened it up in the way I cook it vs. her deep fry method. Ingredients

    2 c left over mashed potatoes-( I make mine with canned chicken broth and the boiled potatoes for a lighter version)
    2 large raw eggs
    1/2 c white flour
    Pam cooking spray
    salt to taste
    Ketchup (optional)

Directions

in a bowl beat the potatoes, eggs, and flour. On a hot griddle, spray the pam to coat and drop the potato mixture by 4 tbsp measures per patty and flatten with a spoon ( the mix will be sticky) fry on one side for 5 min (med-high heat) or until lightly browned and flip- fry for additional 5 min. serve alone with salt or like me with ketchup too.
