Introduction

Ingredients

    2 slices bacon
    2 small onions, chopped
    4 c. chicken broth
    3 medium potatoes, diced large
    1 c. skim milk

Tips

Add a little cheddar, chopped green onions, and a dollop of light sour cream for extra yum.


Directions

Cook bacon in a large saucepan. Remove bacon from pan and add chopped onions. Cook about 5 minutes or until softened. Add the chicken broth and bring to a boil. Reduce heat to medium. Add the potatoes and cook until tender, about 15 minutes. Stir in 1 c. skim milk.

Measure out 2 cups of the soup--heavy on the potatoes--and puree it in a food processor. Add the pureed mixture back to the soup and heat and stir until slightly thickened.
