Ingredients

    *Bacon, Trader Joe's Fully Cooked Uncured, 3 slices (18g), 8 serving, chopped
    *Trader Joe's Mirepoix celery carrots, onions, entire container
    *homemade vegetable broth, 14 serving (remove)
    *Beans, Great Northern, 3 cups dry, soaked and boiled
    Oregano, ground, 1 tbsp (remove)
    Thyme, fresh, 1 tsp (remove)
    Bay Leaf, 1 tsp, crumbled (remove)
    *Kosher Salt, 1 tsp (remove)

Directions

In a Dutch oven, cook bacon to render fat. Remove and set aside bacon. Cook mirepoix until soft. Scape bottom of pot to remove fronds. Add thyme, oregano, bay leaf, salt. Add vegetable broth and 2 additional cups water. Blend about 1 cup beans with a little water. Add to pot. Add remaining beans with about 2 cups of water from beans.

Bring to boil. Reduce to simmer for about 20 minutes. Enjoy! Consider serving with salad and/or slice of toast.

Serving Size: Makes 14, 1-cup servings
