Introduction

Vietnamese soup adapted from Bon Appetit December 2011. Of interest, pho is pronounced like huh? with a p, including the question lilt at the end. Funny! Look up the pronunciation on the internet. Ingredients

    PAM spray
    1 small onion
    4 garlic cloves, crushed
    1 3x1" piece ginger root, peeled
    4 cups (2 cans) low sodium, fat free beef broth
    1 whole star anise
    1 3-4" cinnamon stick
    2 cups shiitake mushrooms
    2 packages ramen noodles, no seasoning packet used
    1 lb. beef eye of round, sliced in thin ribbons
    1 can bean sprouts

Tips

Put ramen noodles in bowl and pour soup over top to serve. Top with sliced basil leaves and sliced jalapenos or serranos. I added frozen cube of basil during cooking instead of topping with fresh basil.


Directions

Saute onions, garlic & ginger. Add water, broth, star anise and cinnamon, bring to boil and reduce to simmer 7-10 minutes.Add mushrooms, bean sprouts and simmer 5 minutes. Cook ramen noodles while other simmering, drain, set aside.Add beef for last 30 seconds to minute.Remove star anise, cinnamon and ginger root before serving
