Ingredients

    10 oz frozen spinach
    3/4 cup low fat shredded cheddar cheese
    1 cup egg beaters (egg whites)
    2 large mushrooms, diced
    1/3 large green pepper, diced

Tips

Vegetable quiche cups can be frozen, and then microwaved before eating.

2 cups per serving.


Directions

Pre-heat overn to 350 degrees.

Microwave spinach for 2 minutes, then drain. Mix all ingredients in large bowl. Line cup cake tin with foil cups, and spray cups with cookin spray. Spoon mixture evenly into each cup, and bake for 20 minutes (or until toothpick comes out clean)
