Ingredients

4 slices of canadian bacon, diced
3 large eggs
1cup egg substitute
1/2 c kraft fat free cheddar cheese
1 cup chopped onion
salt and pepper, to taste
1tsp garlic powder
cooking spray
Tips
Feel free to substitute any other veggies or meats with this recipe. Its versility is great!
Directions
lightly coat small skillet with cooking spray, then sautee the onion and candian bacon for 3 mins or until onion is softened. in a separate bowl, whisk together the egg, egg substitute, salt, pepper, and garlic powder until eggs are mixed throughout. coat a muffin tin with cooking spray, place 1-2 tbsp of the onion/canadian bacon mixture into bottom of each muffin tin, then ladel 1/2 cup of the egg mixture over the top of the candian bacon. Finally, sprinkle cheese evenly over the tops of the egg mixture. Bake a 350 for 15-20 mins, until eggs are no longer runny. Allow to cool for 5 mins, this will also give eggs time to firm up without getting rubbery. Enjoy.
