Ingredients

    cooking spray
    1 lb. chicken breast-tenderized
    1 tsp Mrs. Dash
    1/2 tbsp dried thyme
    2 tsp. olive oil
    2 cups carrots diced (2 large carrots)
    1 1/2 cups chopped celery (3 stalks)
    1 cup diced onion (1/2 med onion)
    2 garlic cloves minced
    8 cups low sodium chicken broth (70-80mg a cup)
    1 bay leaf
    Dumplings:
    1 1/4 cup whole wheat flour
    1/2 tsp dried rosemary (or 1 tbsp chopped fresh)
    2 tsp. baking powder
    1/2 tbsp white vinegar
    7.5/16 cup 1 % milk
    1 large egg
    2 tbsp butter, salted
    1/4 tsp kosher salt

    1/4 cup whole wheat flour
    1/4 cup water
    freshly ground pepper
    1 tsp dried parsley or 1 tbsp freshly chopped parsley
