Ingredients

1 tbsp diced red roasted peppers
1 clove minced garlic
1 tbsp diced shallots
1 oz. shredded mozzarella cheese
1 tbsp olive oil
1 tbsp unsalted butter
2 tbsp fresh basil
1 cup fresh spinach
2 servings pizza dough (for 6" pizza)
Tips
Add kalamata olives, some sort of meat, or different vegetables to give it your own twist.
Directions
Preheat oven to 400 degrees.
Heat a small skillet over medium high heat and add the butter. When melted, add the shallots and sweat for 2 minutes. Add garlic and saute for 1 minute. Add balsamic vinegar, peppers, and spinach. Saute over medium heat until spinach is wilted but do not over cook the spinach. Remove all from pan.
Wipe the skillet clean and place over medium high heat to get the skillet hot. In a 6" pan roll out dough and then transfer to the hot skillet, carefully stretching to edges of the skillet. Spread the olive oil over the top of the dough and continuously shake the pan to heat the dough. Cook the dough over the heat, shaking the pan so that the dough does not burn or stick. When bottom of dough is lightly browned, add vegetable mixture to the top of the dough and spread evenly. Sprinkle salt across the top of the mixture and add the mozzarella cheese over the top.
Place skillet in the oven and bake at 400 degrees for 20 minutes. When cheese is browned, take out, and let cool for 5 minutes before slicing. Garnish top with fresh basil. Enjoy with a glass of red wine.
