Ingredients
2 tbsp Olive Oil
2 large Onions, diced
4 cloves Garlic, crushed
2 tbsp Minors Chicken Base
2 qts water
2 14.5 oz. cans Diced Tomatoes
16 oz chopped frozen Spinach
1 package Rozzano five cheese tortellini
2 cans BJ's canned chicken
Optional: top with Parmesan (not included in nutritional calculation)
Tips
If you are waiting on people, wait to put the tortellini.
Directions
1. Heat oil in large pot over medium-high heat. Add onion and garlic, reduce heat to medium and cook slowly until translucent, about 10 minutes.
2. Increase heat to high, add chicken base and tomatoes with liquid and slowly pour in water. Cover and bring to boil, then reduce heat and simmer for 10 minutes.
3. Add frozen spinach to soup, raising heat to keep simmering if necessary. Cook 5 minutes.
4. Add chicken, cook for 5 minutes. Carefully add tortellini and cook 5 more minutes.
5. Serve immediately
Optional: top with Parmesan
