Ingredients

    4 (6-oz.) firm-fleshed white fish fillets
    Salt and pepper, to taste
    Non-aerosol cooking spray
    3 tablespoons low fat mayonnaise
    1/4 cup shredded Parmesan cheese

Tips

LC: Steamed green beans and a big bowl of broccoli slaw (use a ready-made mix and toss with low fat mayo and a little rice vinegar).
Regualr: Add steamed red skinned potatoes.
Kosher: Use boneless skinless chicken breast halves instead of fish and use Parmesan-flavored rice sprinkles. Bake at 350 degrees for 25 to 30 minutes.
Gluten Free: Make sure mayonnaise is gluten free.


Directions

Preheat oven broiler. Season fish fillets on both sides with salt and pepper to taste then lay them on a small baking dish coated with cooking spray. In a small bowl, combine mayonnaise and Parmesan cheese; spread mixture over fish. Broil until cheese bubbles and browns and fish flakes easily when tested with a fork. This could take as little as 5 minutes, so watch it closely!
