You can add any veggies you want to for this but you need some liquid like the canned diced tomatoes for the poaching of the fish. You can do this with 2 pieces of fish or 4 and any kind of white fish like cod or halibut.
Directions
Cut spaghetti squash in half and cook in microwave for 10-15 minutes or 375 ovenfor about 30 minutes. Chop onions and green peppers; mince garlic; julienne carrots and green beans. Saute onions, garlic and green peppers in olive oil. Add the slaw mix, green beans and carrots and saute another 5 minutes. Add mushrooms and tomatoes and tomato sauce and seasonings and stir. Put fish fillets on top of everything and slow simmer for about 15-20 minutes or cook in about a 350 oven for about 20-25 minutes; until fish is flaky.
