    Cajun Chicken Salad

    1 pound cooked, chicken breast, boneless, skinless, sliced into bite sized pieces
    4 green onions, chopped
    1 red bell pepper, chopped
    1 small jalapeño pepper, minced

    1 tsp honey
    1 tsp dijon mustard
    1 tsp cider vinegar
    1 cup plain greek style yogurt, nonfat
    3 sprigs fresh thyme, remove leaves from stems
    1 Tbsp cajun spice seasoning


In a large bowl gently stir together cooked chicken pieces with peppers and green onion. In a small bowl whisk together the dressing ingredients until blended. Season with salt and pepper. Add dressing mixture to the chicken and vegetables and mix well. Serve as an entrée salad, or stuff into bell peppers.
