Ingredients

2T Almond Butter
1T Butter
.5t Vanilla Extract
1 Large Egg
2T Coconut Flour
1T Unsweetened Cocoa Powder
1 Scoop EAS 100% Whey Protein, chocolate (or similar)
3T Ground Flax Seed
.5t Baking Powder
1 Scoop Stevia Powder
Directions
Preheat oven to 350F.
Cream the butters together, melting as necessary. Add egg and vanilla, mix until creamy. In another bowl, combine dry ingredients. Mix everything together well, adding the cream to help blend.
Roll into generous half inch balls and arrange on an un-greased non-stick baking sheet, or parchment/silpat lined baking sheet. Flatten to desired thickness. These cookies don't spread so feel free to fill the sheet.
Bake for 6 - 8 minutes or until bottom browns slightly.
Dividing dough into 30 pieces yields a cookie with 1gr carb, 1.5 gr protein, allowing easy counting for restrictive diets.
