Introduction

Number of Servings: 6

Ingredients

    Three boneless skinless chicken breast cut in half or strips
    1 tsp olive oil
    i cup chopped raw onion
    3 cloves of garlic, minced (or two tablespoon s of minced jar style garlic)
    3 cans of diced tomatoes
    2 tbsp Italian Seasoning
    4 tsp sugar
    1 tbsp parmesean cheese (heaping)
    1.5 cups Kroger fat free shredded mozerella (any brand as long as it is fat free)

Directions

Makes six servings of one breast half each with tomatoe sauce divided by six

Using a large deep skillet put olive oil in skillet and let get hot.

Add chicken breast, onions, and garlicto hot skillet to brown on both sides. This will take only five minutes

When both sides are browned, add tomatoes, parmesean cheese, sugar, and italian seasoning to the skillet.

Move the chicken around in the tomatoe sauce to coat all sides.

Cook on Medium heat uncovered for thirty minutes. This will thicken the sauce.

Spread the fat free mozzarella on top of the entire skillet. Cover and cook until cheese is melted.

Serve alone or over noodles depending on your diet. We eat without noodles and with a nice caesar's salad. Mushrooms may be added at the same time as the onions if you enjoy.

    Very Good
    Yum! Substituted diced fresh tomatoes for half the tomato paste, cut out the sugar entirely, & breaded the chicken in breadcrumbs, flax, & Italian seasoning. Cooked it covered because our sauce was already thick. Served with a side of green beans. Definitely adding this to our dinner repertoire - 10/22/09

    Very good. I used homemade spaghetti sauce that I canned this summer to replace 2 of the 3 cans of diced tomatoes. Just right! Child friendly and a crowd pleaser for all four of us. Will definitely make this one again. - 2/3/09

    This was sooooo delicious! I made it for my family and they loved it! It was so tasty and the chicken was oh so beautiful! I served it over some rottoni pasta with garlic bread. Absolutely delicous! I loved the onions and garlic as well! I would soooo make this dish again! Wonderful, wonderful meal! - 3/27/08
