Number of Servings: 4

Ingredients

    16 oz Salmon fillet. If skin is on, cook this side first and peel skin off.
    3/4 c. of chicken stock or broth
    1/4 -1/3 c. heavy whipping cream

Tips

You can vary the liquids according to the size of pan and your tastes. This keeps salmon very moist. It is also good for when you aren't sure the time everyone will eat. I don't add the sauce when I serve it as the sauce usually cooks down to a thicker sauce. If the salmon is not done and the liquid is evaporating too quickly, I add more chicken stock.


Directions

Spray smallish nonstick fry pan with cooking spray.
Heat pan and add the chicken stock and heavy cream.
Whisk cream in until mixed.
Add salmon and poach at a simmer until salmon is done. If salmon has skin, I cook that for a couple of minutes and then flip and peel off skin.
Turn during cooking. Cooking time depends on the thickness of the salmon and the heat of the burner.
