    Oats, 3 cups
    *Bob's Red Mill - Gluten Free All Purpose Baking Flour, 0.33 cup
    Baking Soda, 1 tsp
    Baking Powder, 1 tsp
    *Kosher Salt, .5 tsp
    Brown Sugar, 1 cup, packed
    Granulated Sugar, 1 cup
    Applesauce, unsweetened, 1 cup
    Peanut Butter, smooth style, .5 cup(
    Egg, fresh, 2 large
    Vanilla Extract, 1 tsp
    Peanuts, dry-roasted, 2 cup
    *Baker's Bittersweet Chocolate, 3 oz chopped


If you are fine with gluten and dairy, replace the GF Flour Blend with regular flour and replace the applesauce with 2 sticks of butter.


In large bowl, combine oats, flour, baking soda, baking powder, and salt.
In mixing bowl combine sugars, applesauce, and peanut butter. Mix on medium speed until fluffy.
Add eggs and vanilla to sugar mixture, mix until well combined.
Add oat mixture to batter, mix until combined.
Add peanuts and chopped chocolate to batter, mix until combined.
Drop by spoonfuls on baking sheets lined with parchment paper.
Bake 12-15 min at 350.
