Ingredients

    5 campari tomatoes, preferably fresh market tomatoes
    3/4 cup sliced cucumbers
    1/2 bell pepper
    1 tsp olive or canola oil
    red onions or green onions to taste
    salt and pepper

    *optional*
    feta cheese
    avocado

Tips

Green or red onions bring a lot of flavor, and you can add avocado or crumbled feta cheese as well to make it a more substantial meal.


Directions

Slice the tomatoes, cucumbers, and bell peppers, then mix with oil, onions, salt, and pepper

*Optional* Then crumble a small amount (less then 1/4 cup) of feta cheese over it or add an avocado on the side.
