Introduction

These are always a hit with the kids and are great dipped in mustard and served with a side of corn on the cob. These are always a hit with the kids and are great dipped in mustard and served with a side of corn on the cob.

Ingredients

    2 & 1/2 lbs chicken breast (boneless & skinless)
    4 cups Cap'n Crunch Cereal
    1/2 cup flour
    5 egg, scrambled

    Note: Not all of the cereal, flour, and eggs will be used, but you need enough to evenly coat all pieces of chicken.

Directions

Pre-heat oven to 375 degrees.

Clean all visable fat from chicken and cut into strips.

Crush cereal into crumbs in a food processor or by placing in a zip lock back and use a rolling pin.

Set up your "coating station": one plate with cereal crumbs, one plate scrambled eggs, and one plate flour.

Coat each chicken strip in egg, then flour, another coat of egg, and then cereal.

Place all strips on a baking sheet coated in cooking spray.

Bake until cooked through, for approximately 25-30 minutes.
