    For french toast:
    2 slices high-fiber whole-wheat bread
    1/4 cup liquid egg whites
2 tbsp unsweetened vanilla almond milk (or regular milk)
    1/2 tsp ground cinnamon
    1/2 tsp vanilla extract

    For filling:
1 tbsp peanut butter (I used 1 tbsp peanut flour mixed with 1/2 tbsp water)
1 tbsp fat-free cream cheese (or light)

    optional: 1 packet stevia

To make the french toast, combine egg whites, milk, cinnamon and vanilla in a shallow dish and stir to combine (until cinnamon "clumps up). Spray a skillet with nonstick spray and bring to medium or medium-high heat. One slice at a time, submerge each side of the bread into the egg mixture and cook on skillet, turning after about 1 minute and continuing until it's your desired browness.
To make the filling, simply combine the peanut butter [[if using peanut flour, first mix flour with water with a knife]] and the cream cheese. Spread over finished toast.
Sprinkle covered slices with stevia and dig in!!

It's not french toast without the egg yolk, it adds the fat to make it custard-y. - 3/6/18
