Introduction

This is a lighter version of a family recipe. I've replaced sour cream with greek yogurt, full fat cheddar with low fat cheddar, and full fat cream of chicken soup with a lower fat version. Ingredients

    17.6 oz container fat free Greek yogurt
    3 cups (about 2 cans) condensed fat free cream of chicken soup
    2 cups shredded 2% milk milk cheddar cheese
    2 lbs frozen diced potatoes or hash browns
    2 cups Corn Chex cereal, crushed
    butter substitute spray

Directions

Pre-heat oven to 350 degrees.

Thoroughly mix all ingredients, except Chex cereal, in a large bowl and then pour into a greased casserole dish.

Spread crushed cereal evenly over potato mixture.

Spray lightly with butter substitute spray.

Bake for 45-60 minutes, or until cereal begins to brown slightly.



Serving Size: Makes approximately 16 servings at about 1/2 cup.
