Ingredients

2 eggs
3/4 cup unsweetened applesauce
1/3 cup packed brown sugar
1/4 c buckwheat honey
1 teaspoon vanilla extract
3 bananas, mashed
2 cups whole wheat flour
1 teaspoon baking soda
1/2 tsp ground nutmeg
1/2 T ground cinnamon
6 large fresh strawberries, diced
7 T strawberry jam
7 tsp wheat bran
Directions
Preheat the oven to 350F. Spray jumbo muffin pan with Pam.
In a large bowl, whisk together the eggs, applesauce, brown sugar, vanilla and bananas. Combine the flour, baking soda, nutmeg, and cinnamon; stir into the banana mixture until moistened.
Stir in the strawberries until evenly distributed.
Spoon batter into muffin cups until completely filled. Add 1 T of jam to the center of each muffin. Sprinkle tops with 1 tsp each of wheat bran.
Bake for 30 minutes in the preheated oven, or until the tops of the muffins spring back when pressed lightly.
Cool before removing from the muffin tins.
