Introduction

Ingredients

    2 boneless skinless chicken breasts
    32 oz chicken broth (reduced sodium if desired)
    2 large carrots, peeled and chopped
    1 med white onion, diced
    1 cup frozen peas
    1-1/2 cups frozen chopped broccoli

    1/4 tsp garlic powder
    1/2 tsp black pepper
    1 tsp Adobo
    2 tbs dried parsley flakes
    1/2 tsp Creole seasoning (optional)

Directions

Pour chicken broth into a 3-qt pot, add whole chicken breasts, carrots, onion, broccoli, peas, and seasoning. Bring to a boil for 25 minutes.

Remove chicken breasts, cool until able to handle, and chop into small pieces (meat should cut and shred easily), place chopped chicken back into pot and add noodles. Continue to boil for 5 minutes, then reduce heat to medium-low for remaining time, or until noodles are tender.

Serving Size: makes approximately 6, 1.5-cup servings
