Ingredients

    1 1/4C whole-wheat flour
    1C Irish oatmeal
    1/4C flax seed meal
    1/4C pecans, finely chopped
    1 tsp baking powder
    1 tsp baking soda
    1/2 tsp salt
    1C vanilla yogurt
    1/2C brown sugar
    3 Tbls butter, melted
    1 orange, juiced with peel on
    1 large egg
    1 tsp vanilla
    2C frozen blueberries

Tips

Blend yogurt, brown sugar, butter, juiced orange, egg and vanilla. Add dry ingredients. Fill muffin cups 2/3 full.


Directions

Bake at 375 for 25-30 min.
