Ingredients

    1 lb. beef cubes
    3 tbsp minute tapioca, dry
    2 cups celery
    2 small onions
    4 potatoes (4 - 5 oz each)
    2 cups carrots
    16 oz reduced sodium V-8 juice
    pepper, parsley flakes, garlic powder and oregano - to taste.

Directions

Serves 8. Preheat ove to 300 degrees.
Cut vegetables into 1 inch chunks. Layer meat and vegetables in a 9 X 13 pan. Sprinkle with tapioca and seasonings (to suit your taste). Cover tightly with foil and bake in a 300 degree oven for 3 hours.
