Introduction

Ingredients

    1.5 C green split peas
    5 C vegetable broth (plus more as needed)
    1 bay leaf
    1 t salt
    1/2 t ground mustard

    1 medium potato, chopped
    2 medium carrots, chopped
    3 stalks celery, diced
    1 C chopped onion
    4 cloves garlic, minced

    1-3 T balsamic vinegar
    Salt and pepper to taste

Tips

A drizzle of sesame oil really heightens the flavor, and fresh tomato slices add freshness.


Directions

1. Combine first five ingredients and bring to a boil, then reduce to a simmer. Simmer for 20min, stirring occasionally to keep peas from sticking to the bottom of the pot.

2. Add second five ingredients and simmer for 40min, partially covered. Stir occasionally, and add more vegetable broth as needed.

3. Using a potato masher, mash the soup until the majority of the peas have been mashed. If the soup seems too watery, let simmer for a bit without the lid on.

4. Season with balsamic vinegar and salt/pepper to taste.

Serving Size: Makes approximately 10 1/2-cup servings
